Precious Friendship

Since my friend Eunice is Amish, she doesn’t allow herself to be photographed.  She knows how much I love photography and I even gave her a photo of the tiny fawn I had found in the woods.  There was one moment during one of my visits when she looked so pretty with her sparkling white Kapp on her head and she leaned forward, bringing tiny baby Susanna up to her face.  At that time, Susanna didn’t weigh even four pounds, but her tiny face came almost nose to nose with her mama and her eyes focussed and studied Eunice. Oh, how I longed  to capture that moment, but it was not to be.  I would never ask Eunice to allow something she feels is wrong.

Having explained the above, I received a letter from Eunice last week.  I was so surprised, as we have not written to one another for awhile. We both knew she was going to be very busy with a new baby that had some catching up to do, as well as keeping up with a young man two years old! I do try to visit at least once a month….Eunice said in her letter to let her know when I am coming so she can have some snacks ready!

After finishing up her letter,  I turned it over, seeing something on the back.  Oh, how precious!!!

I guess if I cannot have a photo, a tracing of those little hands is really special! (Eunice was holding Baby Susanna on her arms, so her writing is a little hard to read)

Mark’s New Love…

Ain’t me! hahaha

As I was reading on Facebook this afternoon, a friend of mine posted that she was making up a batch of Buffalo Chicken Wing Soup.  My curiosity piqued!  Our family loves Buffalo Chicken Wings. We have even traveled to Buffalo to buy authentic wings.  With about 10 grams of fat per wing, however, this is not a food we would desire to frequent.

After giving up his love of spicy, hot wings, Mark and I put our heads togther and came up with Buffalo Wing style chicken breasts.  These are good and I make them with boneless skinless breasts, so they really are healthy compared to wings!

I began searching the internet for a Buffalo Chicken Wing Soup recipe and several came up.  I gleaned ingredients from a couple of the most appealing to me recipes. Here is what I came up with.

I sauteed 3/4 cup onion  and 3/4 cup celery in about a tablespoon of butter.  (as soon as the juices from the onion began to come out, I covered the mix and turned the heat to very low so they would remain hot) When I make this again, I will up this to almost double this amount.

Into the Crockpot, I placed:

5 cups milk 

1 cup water

3 cups chicken (I used the leftovers from a WaMart Rotisserie chicken)

2 cans cream of chicken soup

1 can cream of celery soup

Franks or your favorite hot sauce to taste

1 cup sour cream

The onion and celery from above. Mix together well.

Turn heat to low and allow to cook about 3 hours.

How easy is that?  The best part is that if some family members want more spicy soup, they can add more hot sauce.  And, speaking of hot sauce,  the Dollar Tree has a nice sauce that is more tasty than just plain Frank’s.  That said, I make my own hot sauce.  The recipe was given to me by a cowboy as he was breathing his last breath…

1 Tablespoon butter or margarine

8 ounces Frank’s Hot Sauce (Yes, I buy this stuff at Sam’s Club by the gallon)

2 ounces Tabasco Sauce

1/2 teaspoon white pepper

pinch of sugar

1/2 teaspoon cayenne pepper

Dash of Worchestershire Sauce

This is a (very) spicy sauce with a more flavorful “bouquet of hot” and sometimes to make it even spicier, we add a tiny bit of Habanero powder! Weehaw!

Well, that does it for the fare on our table this evening.  Oh, I did make some Magic Cookie Bars from a recipe on the side of Eagle Brand Condensed Milk.  They turned out YUMMY! I also made some rolls that will go into the oven in a few minutes and I will add a salad as well.

What better meal on a cold winter’s evening?  So glad my friend, Debbie, mentioned this!!

Good Fun, Good Friend, Good Food!

Yesterday, I had a delightful day.  It all began fairly early as I dropped the kids off at school.  I had a few errands to run, so that was first on my list.  It was weird going into the store and not have to worry about the family or Scotties sitting and waiting in the truck.  Instead, I could wander around as much as I wanted without feeling uncomfortable!

After running my errands, I went and got a bagel to munch.  Since the Tim Horton store is located just a short distance from the lake,  I thought I would eat my bagel on the city pier.  I pulled the truck over and began eating when I spotted that Peregrine Falcon once again.  I dutifully set the bagel aside and hiked on over to see the bird again.  This time, however, I did have the telephoto lens on the Nikon!

Try as I might, it was so hard to crop this photo so it wasn’t so gruesome. I wanted to show this particular photo as it is pretty good of his face.

Of course, there was the typical waterfowl….

and then some….

Of course I did try to get a closer photo of the heron, but when I got to where it was, it was gone.

The was a lot of activity on the lake, though.

There were also several ice fishermen with their little tentlike structures on the ice.  Seeing the great variety of things to do made me think there was a city on the ice!

I sat and looked through the numerous photos I had taken of the falcon and before I knew it, it was time to meet with my friend,   Jeanne! We met at a restaurant that is situated at the north end of the lake,  very near to Kershaw Park. 

Jeanne and I met and we chattered away, laughing and just having a great time! We ordered burgers, and they had to be some of the largest burgers I have ever seen!  What could be more fun than meeting up with a friend and just having some unrushed, fun conversation?  Well….

As we were getting ready to leave, Jeanne gave me the most beautifully wrapped gift!  She said to go ahead and open it when I got home.  Oh my goodness!!!!

Jeanne’s husband is a very talented woodworker and Jeanne gave me this beautiful Zebrawood candleholder he made! AND,  Jeanne made the adorable little card! Jeanne crafts all sorts of lovely cards…so creative! These treasures are being showcased on the table so everyone can see them!

What a fantastic day it was. It is like a breath of fresh air having a day with no great obligations or time constraints!

The Days Just Slip Away!

I cannot believe I have once again allowed this blog to get behind, but I have! It seems like each day brings on more tasks and we are always going upwards! (as in pushing a very large boulder uphill!)

Today, Mark had a dental cleaning appoinment late this morning.  After the appointment, we drove down to Hornell to get the snowmobiles registered.  It is always so much easier to go to the Hornell office, as Canandaigua requires one to go to three different clerks before getting out the door.  The system sounds good, but when going, it is wise to pack a lunch!  Okay, slight exaggeration, but I don’t like waiting in line for hours…and yes, it really is hours!

After visiting the DMV,  we were off to get a late lunch.  We had a tremendous lunch at a Chinese restaurant there and then we were off again…this time to the home of my Amish friend and her husband.  Mark has been trying to help them in negotiating with the hospital for their baby daughter’s care.

If I may rant for a bit…

We are asked to be *tolerant* as far as skin color, religious beliefs, sexual orientation, etc.  Why, then, are the Amish treated like second rate citizens?  Let me make note that an organization that works with Amish and Mennonites has tried to negotiate with the hospital to no avail.  It is a known fact that hospitals charge well above the actual cost of services and goods provided.  The company that tried to do the negotiating offered a higher amount than Medicaid would pay, and they were turned down.  The hospital  never even came back with a counter offer.

My heart aches for my friends. They don’t have a third of a million dollars for their bill.  Why is the hospital being so stubborn!  Well,  my friends have begun making small payments to the hospital and as long as they are paying something, I hope that will keep the wolves at bay.  Why would the hospital have turned down a large lump sum only to be given a small amount each month?  In all actuality, the amount will take probably more than a lifetime to pay off.

Well, sorry to rant, but I feel so helpless! 

Tis the night before the night before Christmas!  Is everyone ready?  I feel like I am behind, but I will leave it at that.  I am tired of feeling like Christmas has to be perfect.  After all, the perfect Christmas gift was offered to all mankind in the form of a precious baby, and He is the best gift of all!

WheeeeeeeeeeeeeeHaw!

How’s that for a title?  Let me tell you, that is precisely how life feels right now.  Every day, it seems there is some new plot/ploy/scheme in which I am conned into playing!  Well, it isn’t that bad, really, as it sure beats sitting around like a couch tater!

Yesterday afternoon, I got to meet in person a blog friend who lives not too far from my home!  We got together at one of her favorite places to eat, called Simply Crepes. 

 I was about ten minutes late for our one o’clock meet, but let me tell you, Jeanne and I chatted away like we’ve known each other for ages!  We giggled and laughed and ate the most incredibly delicious crepes!

Jeanne selected a tasty-looking Thai Beef Crepe….

While I opted for (yeah, Mrs. Spicy….that’s me!) a Buffalo chicken crepe.  It was fabulous! Mmmm!

I love the decor in this store. I am always trying to do the umexpected when it comes to decor.  For me to walk into a room full of furniture in which everything matches perfectly,  I feel like I am in a showroom.  I *like* mismatched pieces and feel much more at home with styles and designs that might just contradict one another.  (I am sure there must be a test somewhere that would analyze such characteristics!)  When I looked up and saw crossbraces supporting the floor above the ceiling with chandeliers hanging below,  I really, really liked this place!

A cozy mantel, complete with  fireplace just added so much to the atmosphere!

I love the red and gold Christmas theme placed on the mantle as well!

Our waitress was a delight. She was amazed Jeanne and I were meeting for the first time and she laughed and had fun right along with us! Now, where might the photo of Jeanne and me be? Oops! For that, you need to take a peek at Jeanne’s blog ! Yes, although I had my Nikon with me, Jeanne was more forward thinking in having our very accommodating waitress snap a shot of the two of us!

This meeting was such a treat!  Jeanne was the same in person as she is in her blog….a personable, caring, sharing person!  And the best part?  Well…this just might become a tradition!

My, How the Winds do Howl!

Well, once again, I am in a rather “stale” mode; or is that “stall”?  I’ve not been inspired to take any photos the past couple of days.  Today, however, I did have somewhat of an excuse. The wind has been howling mercilessly the entire day…I am convinced that were I to take a camera out in this, it would either shake so badly, all my images would be grossly distorted, or, (worse scenario) the camera would sail right out of my grip and fly into the atmosphere!

Today was a very boring day with the highlights being the food we consumed.  And it was not all that exciting!

My Amish friends have been on my mind a lot the past couple of days.  They are being faced with some whopping big bills from their little Susanna’s birth.  Since the Amish do not subscribe to insurance,  the price tag seems a bit insurmountable in my book.  If you are inclined, please keep my friend’s family in your prayers.  I know they are greatly appreciated!

Hopefully I will be getting out and doing some photos again soon.  My poor trigger finger is itching badly!

Bet You Thought I’d Gone Away?

No, I have been here. I have just been overwhelmed by day to day life in general.  As I watched the days passing by one after another,  I decided I would wait until December first to begin posting once again.

In all honesty, life has been so full of this, that, and the other thing, I just thought a break would be beneficial to my overly-stimulated brain cells!  I keep bumping into myself coming and going and I was feeling a bit “fragile” to be perfectly frank.  Life has been one activity followed by another…most not lending themselves to my photography addiction and that made me feel so distraught! 

Soo….where do I begin?

Well, a couple of weeks ago, Ben and I began working on painting his bedroom.  Poor Ben. He had been given a small room and it was painted a (very!) pale pink color on the walls.  I loved that pink, as it really didn’t appear to be pink. When Ben was about ten, he decided pink was not his choice of color.  Taking matters into his own hands (quite literally, indeed!) he worked frantically, using an office stapler to mount newspapers and old maps to cover what he insisted was a hideous color.

Ben learned how to not only spackle, but also repair walls with some major flaws in them! He worked for a long time, removing those small staples and filling in the holes.  He had also made some larger holes in the walls so he learned how to repair those as well. 

After visiting the home centers a few times and bringing home scads of color chips to mull over, Ben decided on a color called “Fretwire”.  *as in the wire used to form the frets on a guitar*  I thought the color might also be called buckskin, as it reminds me of that color. (really dating myself here…remember when there *weren’t* zillions of colors available?)

Here is a photo of the freshly painted room.

This photo seems a little light to me, but you can see it looks very nice with the moulding and floor. Too bad. Well, about the floor, anyway, as Ben wants to put down some carpeting.  Argh. Oh, hey, Ben’s ceiling isn’t boring white, either!  The color is Swiss Coffee.  Doesn’t that sound like something one would want to awaken to?

Mark and Ben have some plans for building a bed and finishing the room.  I will show photos as the room progresses.

This is the time of the year when we begin to think about decorating.  One of the projects we undertake is a Christmas wreath on Mark’s dad’s grave.  Al really loved Christmas, so this is really special. This year, I asked Mark if we might try doing the wreath ourselves.  We usually go to a business across the road from the cemetery, but I thought we might try our hand at this.  As it worked out, we bought a gorgeous wreath from Wegman’s.  The only thing I had put on at this point was the bow. (and yes, most always a lovely plaid!)

Michelle saw me decorating the wreath and thought she might like to give this a try, so I stepped aside. This is what she wound up creating.

I was thrilled with the end result, as was Mark.  The most surprising outcome of our do it yourself effort is that it cost about one-half of the price we typically spent.  And, it had a lot more decorations!

Thanksgiving was the 25th of November this year.  Carly had asked if we wanted to join her and her family at her in-laws’ home this year. Wow, Carly offered to make the entire feast (with lots of helo from her three kids) and I wasn’t about to let an offer like that go! 

Madeline and Cy are the most awesome hosts and we spent the hours talking and laughing, sharing stories and just having so much fun!  Carly and the kids were bustling about in the kitchen when we arrived and it was awesome watching them work!

So, here are some photos of the most awesome feast!

That turkey could not have been any more perfectly browned! It looked like something from a magazine!!! (Carly used some recipes she had found in magazines to prepare this amazingly executed fare.)

Carly spent so much time creating this fit-for-a-king meal.  The bread used in making the stuffing was made by Carly! Carly’s Sarah has an allergy to soy and soy-based products, so Carly is careful about making food without those culprits.  It is tough sometimes, but she has been doing it long enough that it isn’t so taxing anymore.

Oh my, those devilled eggs were good! Carly made the mayonnaise used in making them as well since most mayonnaise contains some soy or soy products. The stuffing to the left of the eggs was awesome with cranberries and pecans included! On the very left of the photo is the delicious cranberry sauce she made.

By the way, isn’t that table elegant?  Madeline had created a most beautiful atmosphere in which to enjoy the meal! I loved the colors….everything really was picture-perfect!

The one dish I loved that I probably overate on was Brussel Sprouts and grapes.  I thought the combination really different, but it was lip-smacking good!

Oh, the rolls behind the Brussel Sprouts and Grapes were my (humble) contribution.  Carly had initially asked me to make an apple pie, but later asked if I could bring rolls instead. I love making rolls, so I was happy to do so.

Mmmm….there was rice with cranberries as well. There were amazing bite-sized biscuits with Chai and cranberries and simply amazing mashed potatoes with celery root.

The flowers on the table just added to this special meal!  Everything was fantastic!  I enjoyed this day so much. It was obvious that Carly and the kids had put a lot into this special holiday. Carly also made the most scrumptious pumpkin pie!

After a most filling meal, the women retreated to the kitchen to put away leftovers.  The kids went to the family room to enjoy some Wii games and Mark and Ben visited with Cy for quite some time. Cy had set up his bass guitar, thinking Ben might like to give it a try.  Ben thoroughly enjoyed the opportunity and was impressed by some things Cy showed him and Mark.

It seemed like the time flew by…as always, times flies when the occasion is enjoyable!

Thanks again, Madeline, Cy, Carly, and all who contributed to make this day one of the most memorable ones we have enjoyed!  I am just sorry this is so late!

A Little Humor

Today was another one of those crazy days! 

When I saw that the weather was going to be sunny and nice this morning,  I decided I should try to give the camper a quick “once-over” wash job.  I didn’t have time to do a more thorough job,  so I grabbed a brush made specifically for washing RV’s and quickly brushed off as much dirt as I could.   When I was about halfway through the task, Ben came out and helped….we were done in about half an hour.

Ben made a fabulous salad for everyone for lunch, then it was time to gather all the tools we needed to begin painting Ben’s room.

We started painting at about 3 pm even though I had hoped to begin much earlier!

A short time after beginning our painting, the phone rang and Michelle came into Ben’s room to tell me my friend Eunice was on the phone.  She was calling from Ronald McDonald House and my heart fell to the floor as I wondered if little Baby Susanna is okay.

As it turned out,  Susanna has pertussis and was struggling a bit with breathing. Eunice and Noah called their doctor and she sent them to Buffalo Children’s Hospital. Eunice said the good news is that Susanna hasn’t needed oxygen at all today.  Eunice is speculating that if Susanna doesn’t need oxygen for a certain period of time,  she will be released from the hospital.

I explained to Eunice that Ben and I were painting and asked if I could call back later.  Eunice said that was fine, so I continued to paint.

A little while later,  another call came from the Ronald McDonald House.  This time, Mark answered the phone and Eunice said she had gotten a call from someone sounding like me that needed help. She wondered if I had called and if I was all right.  Mark assured her Ben and I were painting, so I had not called.

After Ben and I finished with the paint project, we cleaned up the brushes and rollers and put things away. I was exhausted, but Mark said I should call Eunice.  I did call and we talked and giggled for probably an hour. 

I mentioned the call she made earlier and she began giggling.  She said when she received the call, Noah was down doing their laundry while she rested in their room at the Ronald McDonald House.  The phone rang and she immediately thought it was me calling her for help!

When Noah returned from the laundry room, she told him what happened….he began laughing and told her it was HIM!  She said he often plays jokes like that.  We giggled some more and Noah got on the phone to tell me he was trying to cheer Eunice up….laughter IS the best medicine, after all!

I’m still chuckling over Noah’s little prank!

Going Non-Electric!

Well, for the afternoon, anyway!

No, we didn’t lose our electric…I was off to visit with my Amish friend, Eunice.

I couldn’t have chosen a more beautiful day to travel down to visit my friend.  The sky was blue, the sun was shining, it was pretty warm, and a stiff breeze was causing the sparkling hues of Autumn to tumble downward like falling rain.

And I did stop at the South Bristol Overlook to take an obligatory Autumn-on-Canandaigua-Lake shot.

Even with all the beautiful surroundings,  my mind was on my visit.  I was going to write to Eunice and ask if it was okay to visit on such and such a day,  but I figured with a wee small baby as well as a two-year-old,  her hands were full and it might be hard for her to write back.  So, I took a chance!

Eunice’s house was not always Old Order Amish.  It actually was “Englisch” before they bought it last year.  It still has some modern ammenities such as a satellite dish on the roof and electric wiring,  but of course, these things are now non-working.

Eunice’s little boy was always very shy around me, but when I met him previously, he was surrounded by relatives and he had no need for the likes of me!  Today, however, was quite different as the little fellow warmed up to me and as I helped Eunice put up some chicken and broth for chicken noodle soup,  he hugged my leg several times!  I guess looking at books together was a great way to break the ice!  He has brown eyes and the most awesome golden riglets!

Little Baby Susanna is now over four pounds and I could see she has grown since the last time I saw her.  She is so sweet and loves being cuddled by her mom. 

Being Old Order Amish means that my friends cannot be photographed.  Such a shame as I saw so many fantastic ops for some beautiful mother-daughter shots.  That’s okay, though, as I think many of the things I saw today will remain etched in my mind’s eye. 

I did take one shot as I was leaving today…of buggies in the barn.

I thoroughly enjoyed this visit and cannot wait for another!  Eunice said to come by again and little Chris (her son) mimicked the invitation.  I am sure I will visit again!

More Prayers, Please!

I have mentioned here previously about my friend, Eunice and her tiny baby, Susanna. 

Yesterday,  Mark drove his mom to a doctor appointment. When this was done,  I asked Mark if I might be able to visit with Eunice.  We drove over to the Ronald McDonald House where Eunice is staying. I found her there and she invited me into her room to visit.

Through a miscommunication, Mark thought I was going to call when I was done visiting, whereas I had asked that he call me after about an hour and I would leave.  As it was, Mark was awaiting my call!  So, in the end, Eunice and I visited for about two and a half hours!

Mark finally did call and when several family members arrived,  I took my leave!  I had to wait a few minutes for Mark and the kids to come pick me up, so I walked around the Ronald McDonald House grounds a little.  This house is for parents and family to stay when a child is in the hospital.  Most of the children are in pretty serious condition and so the house offers a pretty setting, even though it is located in the city.

What a great alternative this house offers to parents.  It is much nicer than staying in an expensive hotel room and people may interract if they would like.  The house offers refrigerator space,  pantry space,  a cooking and baking area, and also a nice library.   Eunice told me they also offer dinners (food donated by local grocers and warehouse club) that are cooked by various churches and other organizations.  What a comfort to suffering families!

I ask that if you are inclined, please lift Eunice, Noah, Chris, and little Susanna up in your prayers!  Susanna happened to have surgery yesterday and although Eunice was told everything went well,  I know this is so stressful for the family.

On our way home, we saw some incredibly beautiful skies!

T’was a bit of a struggle photographing the sky through the rear window of the truck traveling about sixty miles per hour….using the camera on my cell phone!  Ah well, you get the idea!
